The drinks programme is built on craftsmanship and provenance. A considered collection of cocktails, aperitifs and artisanal spirits champions the makers behind them. Moving from impeccably balanced classics to restrained contemporary serves – each guided by seasonality, and a quiet sense of theatre.

The wine list is driven by curiosity and a deep respect for the undiscovered, while honouring the producers and domaines that have set the benchmark at home and abroad. Drawn from Surreo’s 4,000 bottle cellar, the selection ranges from mineral-driven coastal whites to rare back-vintage releases, curated with a sommelier’s instinct for both depth and approachability. A rotating draft beer selection sits alongside – pouring local favourites and cult classics with equal reverence.

Bar Surreo is also designed for dining with a dedicated culinary programme which draws on Basque and Roman tradition, offering a menu of refined snacks and more substantial plates.
